Eloïse
Eloïse found her passion for cakes in Paris when she went to stay with her Uncle one summer during school. Sneaking off to the Patisseries every day, El followed her sweet tooth home to work part time in various restaurant kitchens where she hoped to add some sparkle to the dessert trolley.
After an advertising career in London, Eloïse took a leap of faith and gave it all up to follow her culinary dreams back in her native Essex and went on to graduate top of her class at patisserie school. She was later awarded highly commended Young Entrepreneur of the Year at the Essex Business Awards.
In 2015, Eloise was headhunted for a brand new show on Channel 4 called ‘Extreme Cakemakers’ which was set to be the UK’s answer to ‘Cake Boss’. Eloïse’s skill and creativity in producing the exceptional and the impossible, as well as her ability to enthrall and engage her audience, are all showcased on the programme which is available to watch online at All 4.
Eloïse’s fantastic repertoire of cake courses has a worldwide reach seeing visitors from all over the globe. Her thorough yet relaxed and adaptable teaching style makes learning a pleasure and in 2011, Eloïse taught home baker Jo Wheatley who went on to win that years Great British Bake Off on BBC1.
When she’s not creating culinary masterpieces, you can find El throwing rocks down at the bowling alley or burning off some steam playing roller derby.

Lyndsay
Lyndsay is a well oiled baking machine and there’s no job she won’t take on. A pinnacle of calm in even the most stressful situations, the patience of a saint and with years of teaching experience, Lyndsay is our course tutor extraordinaire. You can also see her on Extreme Cakemakers on Channel 4 helping to whip up some of our crazy cake creations. Outside of work Lyndsay is a super mum, which probably explains her mega organisational skills when she’s at the bakery. Oh and if you come on a cake course with Lyndsay, make sure you ask her about the time she had to go to A&E because she got her finger stuck in a piping nozzle. Shouldn’t laugh. It’s really not funny. Nooooo, not funny at all…

Carisse
Cake Designer & Course Tutor Carisse has been a professional chef for 17 years and caking for 10 of those – I know what you’re thinking, she doesn’t look old enough does she?! Carisse is a wealth of knowledge and joined us after a 10 year stint as Head Patisserie Chef at the well-known Lion Inn and a bit of time off to have a baby. Outside of work Carisse is one of Costa Coffee’s best customers, and loves a nice woodland walk with her daughter. Oh and if you see her out tearing up the dance floor on a Friday night, tell her she’s got work in the morning.
Favourite Cupcake: Carrot (that's one of your five a day, right?)

Amy
Amy is our very own bakery pug mumma and wannabe mermaid. (Second to this she’s also a Course Tutor and Cake Maker too.) When she’s not baking up a storm or sending home hoards of happy course attendees, Amy is caring for her ‘baby’ Miley, the Pug with the power to melt hearts and destroy ALL of the shoes. Oh and if you need a sick contour for a night out, Amy’s your woman.
Favourite Cupcake: Rhubarb and custard
